Sous Chef


Martin's Red hotel in Tubize is looking for a Sous-Chef.

Martin's Red is located on the site of the Proximus Basecamp (National Technical Football Center) in Tubize, the training center of the Red Devils but also of many other teams of all categories. If the hotel offers optimized facilities for athletes visiting the center, it also pampers vacationers and business travelers. Recently, the Belgian Cycling Federation has also moved to the site.

About the job

Helps organize, delegate and control. Replaces absentees and assists staff during peak periods.

Assists the Chef in :

  • Establish and elaborate menus, compositions of dishes (organisation of buffers and à la carte service)
  • Organize and coordinate the activities of kitchen staff and plan activities and preparations; supervise and instruct commis, chefs de partie and other kitchen staff; train and direct staff
  • Calculate, draw up, transmit and control orders and deliveries; control stock management; collections and use/loss
  • Control kitchen activities: set-up, preparation, conservation, cleaning
  • Replace kitchen staff in case of absence (sous-chef is familiar with all preparations and kitchen departments) or replace during peak periods, assist in all kitchen activities, participate in preparations
  • Guarantee quality and taste
  • Respect kitchen rules, supervise hygiene and presentation of staff

Your profile

You are helpful, multitasking, autonomous and proactive ;
You are stress-resistant, flexible and punctual ; 
You’re a team player and ready for a long-term commitment ;
You speak French and/or Dutch ;
You have a (first) similar experience ;
Knowledge of the hotel industry is an asset.
